Slow Cooker Garlic Rosemary Carrots
Your new go-to vegetable side dish for any occasion!
When it comes to planning a menu for a family dinner or a holiday party, I love an easy slow cooker recipe. There are always too many dishes that need to be cooked in the oven, so using one or two crockpots is key to saving that precious real estate. I love casseroles, but I can only fit so many in the oven at the same time!
Slow cooker recipes are also key to saving valuable prep time. You can get one recipe entirely done in under 10 minutes, and it feels great to check one off your list.
Another struggle I often find is not having enough vegetables on the menu. If you find yourself thinking “I just need 1 more vegetable”- then this easy recipe is for you. Carrots in the crockpot cannot be beat- fast, easy, delicious and healthy (mostly, not looking at all the butter). I make a few variations of this recipe- this savory version is perfect for Thanksgiving or Christmas, and they go great with classics like meatloaf or roast chicken.
All you need is carrots, water, left over white wine, 1 stick of butter, fresh or dried garlic and rosemary, salt and pepper- and a slow cooker. To make the recipe, dump all of the ingredients into a slow cooker and set it on low to medium heat for at least 4 hours.
I use whatever white wine I have leftover or available. If you are only getting wine for this recipe (and don’t want to drink the rest of the bottle yourself #nojudgement), you can buy single-serve box wine or a small pack of single serve wine bottles. This is usually cheaper and less wasteful than buying or opening a bottle of wine just for 1 recipe. I like the brand “Black Box” for boxed wine, or Cavit for a decent and cheap pinot grigio.
It usually takes my slow cooker 4 hours on medium heat to fully cook the carrots. I have a couple of different slow cookers and my well-loved brown and yellow Crockpot, that is older than me and was once my moms, is still my favorite for this dish- it is the perfect size. If you are in the market, I also have this newer version from Crockpot - it is basic, inexpensive and works great.
You know the carrots are done when you can easily stick in a fork. Your slow cooker may take more or less time depending on how it cooks- I recommend starting the carrots earlier than you think you need. If they are done early, you can just put your cooker on warm until you are ready to serve and eat.

Slow Cooker Carrots with Garlic & Rosemary
This easy recipe takes only a few minutes to throw together and results in a delicious side dish that works for any occasion!
Ingredients
- 1 LB Carrots
- 1 cup White Wine
- 1 cup Water
- 1 stick Unsalted Butter
- 1 tablespoon fresh Garlic (or 1 tsp. garlic powder)
- 1 tablespoon fresh Rosemary
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Place crockpot on your countertop and turn on to low/medium temperature.
- Pour white wine and water into crockpot.
- Put carrots in the crockpot, then add all seasonings (salt, pepper, garlic and rosemary).
- Cook on low-medium temperature for at least 4 hours.
- Carrots are done when they are fork tender. Serve warm.
